What if you didn't just visit Italy? What if you became part of it?
For eight days, you'll live at Piano Paradiso, an agricultural estate in Orsara di Puglia, and apprentice with Chef Peppe Zullo—a "farmer-chef" who believes food is "an element of happiness." This isn't a cooking class that happens to visit Italy. This is a deep dive into a region where food, landscape, history, and tradition are inseparable.
You'll explore medieval villages and taste the seven essential flavors of Puglia. You'll bake bread in a 1526-era stone oven using methods that trace back to Arab traders. You'll make pasta by hand in artisanal workshops where one quintal is produced per day—the old way, the right way. You'll taste cured meats from heritage Black Pigs and cheeses from buffalo that graze freely on ancient pastures. You'll learn from master basket weavers how to work with rushes and olive branches the way their ancestors did.
But here's what matters most: by the final dinner, you won't just have recipes. You'll understand how a landscape shapes food. How tradition isn't nostalgia—it's a choice to do things with intention. How a meal is an act of love. You'll have friendships forged in kitchens and over long tables. You'll return home changed.
